By this time next week, we'll be in full Holiday Season mode. I love the season and enjoy gathering with friends and family. Thanksgiving for us is a traditional meal that has to include the usual standards: Aunt Sandy's Fruit Salad, Maggie's Cherry O'Cream Cheese Pie and my kids' favorite is my mother-in-law's Broccoli Cheese Casserole.
Clare always had great tasting, but really easy recipes. Her repertoire wasn't large and cooking was not a passion, but this one is always a huge hit.
2-3 bags of frozen broccoli cuts (do as many bags as you want, but the more the better)and place in a casserole dish.
Slice a brick of Velveta cheese (yup, Velveta...) and scatter the slices over the broccoli.
Melt 1 stick of butter in a large saucepan, remove from heat and then add 2 sleeves of crushed up Ritz Crackers and mix. Sprinkle cracker topping over broccoli and cheese. (this can be done up to 1 day in advance)
Bake in 350 degree oven for 45-60 minutes (until topping browned and cheese melted through.
